Amy describes herself as a cookbook collector, aspiring gardener, beach bum and bookworm, we describe her in one word… genius. Her instagram is full of delicious recipes that are always healthy and family friendly. Which is why we have decided to share them with you all periodically. If you aren’t drooling yet just from the sneak peek of her feed you should probably get your eyes checked. This recipe below is one of our favorites from Amy that we have tried & please don’t expect it to be the last healthy family meal from her that we share with you. 

 

Creamy Saucy Thai Curry Noodles +Veggies (via @serve_sunshine)

  • Soak 12oz. Pad Thai rice noodles in hot water until they are pliable, ~5 min.⁣⁣

  • While the noodles soak, heat a large pan (I used my 10” cast iron) over med heat. once it’s hot, add 3 tbs curry paste (i used @thaikitchen red curry paste. i think it would be great with green too. feel free to add a little more curry paste if you want more heat- i wanted my kids to eat it so i didn’t want it very spicy). cook the curry paste for about a minute until it is fragrant, then add 1 tbs minced garlic + 2 tsp minced ginger (@dorotgardens cubes are so easy!). continue cooking for another minute.⁣⁣⁣⁣

  • pour in 1 can of coconut cream (mine was from @traderjoes) & stir to combine. add the soaked rice noodles + 3 tbs coconut aminos + 2 tbs maple syrup and continue cooking on med/low until the noodles are soft enough to eat, ~10 min. add in water, a tbs or two at a time, as needed to keep the sauce loose. ⁣⁣⁣⁣

  • while the noodles cook, heat another large pan over med/high heat. add 1 tbs coconut oil, then 3-4 cups chopped veggies + 1 tbs coconut aminos. use whatever veggies you want! i used a frozen stir-fry bag with broccoli + peppers + mushrooms + green beans & threw in some shelled edamame. cook, stirring every few min, until the veggies are tender & browning on the outside. it’s helpful to use a big pan so the veggies can spread out in a single layer & caramelize rather than steam.⁣⁣

  • once the noodles are done, take off the heat & toss with the veggies. juice a lime into the mix & toss. serve with cilantro + more lime juice.
